Springtime is temporary heaven

Today was a beautiful day, full of promise and expectations.  I love the time when you first wake-up and you are thoughtless.  Laying in bed and just feeling the beginning of the day.  Your senses start to kick in and you hear  a bird chirp, or a lawn mower  maybe a car passes by. 

But reality always sets in before that first cup of coffee.  The phone rings and decisions have to be made, as mundane as choosing the color of mulch for the flower beds or guiding a friend in some sort of personal crisis. I

Nothing is ever simple now a days there so much to always worry about.  The news is full of doom and gloom, a cyclone killed thousand of people 2 days ago.  Fuel cost are rising with no end in sight.All I can think about is needing to buy 2 new cars for my boys, and the cost of used ones have escalated so much that it’s almost worthwhile to buy new. Have you looked in the classified section for used cars, it crazy! Buying a used car is a hard thing to do.  You worry that someone didn’t respect it and didn’t take care of it.  You are afraid to put your child into something that isn’t safe and reliable. I always invision the worst scenario, driving on a back road late at night and the car dies. That’s the guilt trip I put on my husband everytime he fiinds one that’s perfect but the mileage is too high.  

Of course we could buy a new car, but that is filled with potholes too.  It’s wrong to reward your children with an expensive gift when they haven’t really earned it.  At least they need to graduate college and have a plan for the future.  So what to do, I will continue to ponder this problem and keep you updated with the outcome.  In the meantime..it’s time for a recipe  I have an easy fish recipe that is delicious, a classic.

Scrod with Ritz crackers

1 lb of fish
3/4 sleeve of ritz crackers
1/2 stick of buter or margarine
1/2 chopped fine onion

Saute the onion in a pan with the butter until soft, on medium heat.  Once cooked add crushed crackers and stir until combined.  Spray a glass pan with pam and add raw fish.  Top with the cracker stuffing and bake in a 350 oven for about 1/2 hour.  Check after 20 min. Enjoy!
