Anyhow, I love new recipes so I thought it would be fun to share a new one with you ever time I write. We could share both life experiences and recipes. I would love to post any I get too. This is a good springtime chicken recipe.
Chicken with Rosemary and Lemon
1 Whole Chicken (Free Range is the best)
2T of butter
2 4″sprigs of fresh rosemary
lemon
Clean the chicken well. Thread each sprig of rosemary with 1T of butter cut in 1/2 and threaded on the rosemary. Lift the skin on top of the breast and put the threaded rosemary and butter under the skin. Take a whole lemon and cut off both ends. Place in the cavity. Cook in a 350 oven for about 1 1/2 hours depending on the size of the bird. Season with a little salt and pepper if you want. It’s clean and very fresh tasting.
